Ultra energy cookies
1 cup of dried cranberries diced
1/3 cup of orange juice (2 oranges)
2 tablespoons of lemon juice
2 tablespoons of sugar
2 tablespoons of Chia seeds
2 tablespoons of flour
Let’s start with the filling. Juice your oranges then combine the juice with the chia seeds. This will soften your Chia seeds. Combine the rest of the ingredients together except the flour. A Food processor works best. Once you have all the ingredients together go ahead and add the OJ and chia seeds. Once blended heat in a sauce pan at low to medium heat and stir in flour. Cook just long enough to thicken the filling slightly, that should take 3-5 minutes. It’s critical not to let it burn.
1 stick of butter softened
1/2 a cup of sugar
Zest of two Oranges
1 large egg
1/2 a teaspoon of vanilla extract
1 1/2 to 1 3/4 cups of all-purpose flour.
Preheat oven to 400°. Whip together Butter, Sugar, Orange zest, Egg, and Vanilla. Add flour, then using a pastry cutter to combine. The dough should not stick to your fingers. Roll out dough into a rectangular shape. Lay the filling out in a row on the dough. Cut and fold the dough to create a log, then cut into 2 inch sections and lay out on a cookie sheet. Greasing the pan is not required. Once you have finished laying out all the cookies on your sheets, place in oven. They will take 8 to 15 minutes to cook at 350. They are best cooked till just barely starting to brown. Remove from pan immediately and let cool. Makes 16+ cookies. (Pictures will be added next week)
